Got tired of watching all of my teams lose yesterday, so I canned 4 jars of salsa. At least I got rid of all of our ripe tomatoes for a few days!
Combine tomatoes, bell pepper, garlic, onion, jalapenos, vinegar, sugar, lime juice, cilantro & oregano in large sauce pan. Heat to boiling, reduce heat & simmer 15 – 20 minutes.
Add 1/2 tsp canning & pickling salt to bottom of 4 pint jars. Ladle hot salsa into hot jars, leaving 1/2 inch headspace.
Process filled jars for 15 minutes in hot water bath.
