Miss Kay’s got nothing on mine!!

Jambalaya, that is. I made some tonight with all garden-fresh veggies. Turned out delicious & the rice was nice & tender. Seems like it took forever, but the hardest part was all the chopping & dicing of the vegetables. Well worth it, though!

Melt a stick of margarine, add bell pepper, onion, jalapenos, cayenne pepper & sautee. Add garlic & stir for about 30 seconds. Add Worcestershire sauce, bay leaf, Tony Chachares, pepper, parsley, tomatoes & box of chicken broth. Add sliced andouille sausage (1 package) & cooked, diced chicken breasts, seasoned. Bring to boil. Add 4 – 5 cups instant white rice stir in, quickly, cover & reduce heat. Simmer 30 – 45 minutes, or until all juice in bottom of your pot is gone. Take off heat, let stand 10 minutes, then enjoy!
